I'm in my new kitchen and ready to make chocolate

We finally have our certificate to operate in the new kitchen in Haiku. I'm extending my chef's selection which includes a 12 piece box of chocolates and an additional 6 piece sampler box. I know I'll be making my most popular flavors including passion fruit, caramel, coconut, coffee and macadamia nut cream. I'll toss in some surprise flavors while I'm packing up your boxes and get them to you within days of your order. Scroll down the page for some photos; I promise I'll have more up in here very soon.

Thank you again for all the support and encouragement. Without the love of friends I would have given up a long time ago!

I'm traveling again!



I've gone to the packaging expo for some holiday ideas. In the meantime, take a look at some of the flavors I've been working on but check back after October 14 for new photos and flavors.


Key Lime - I was able to buy some key lime concentrate and it's delicious! Key lime is unlike anything else. It's almost perfumy for lack of a better word. I've never worked with it before and I can't wait to turn it into truffle filling.


Kona Coffee Crunch - A white chocolate shell that holds a sweet crunchy macadamia nut praline layered with a 100% Kona coffee ganache.


Dark chocolate Macadamia nut buttercup - This one is really a favorite of mine. Hand made toasted macadamia nut butter blended with dark chocolate, piped in a little foil cup and topped with a thin layer of more dark chocolate. If you have any vegan friends - you may want to share this one with them.

100% Hawaii grown milk chocolate - This chocolate is grown in Hawaii then the beans are shipped to California where they are turned into real Hawaiian chocolate. I like to put this filling in a thin semi sweet shell.

Toasted coconut - If you liked the Mounds Bars we enjoyed as kids, this truffle will knock your socks off. The coconut is toasted to really bring out its flavor then blended into a white chocolate ganache with fresh cream. It's pure and simple and oh so good.

Cabernet cream - Dark chocolate blended with red wine made right on Maui, softened with fresh cream and piped into a deep claret colored shell. I sometimes make this one in the shape of a cluster of grapes.

A Fresh New Production Kitchen

As we get ready to move into our new upcountry kitchen, I'm inspired to create new flavors while keeping the long standing favorites in place. This will be a month of experimenting. So if you're into a little adventure, come with me as I work with some locally made ingredients incorporated into my chocolates. I can't be certain what exactly your selection will contain; let's call it "chef's selection." Now of course if there is something you know you love and don't want to be without, please drop me a line so I can be sure and include it with your order.

For this month I'm still offering a special to help offset the cost of shipping. I'll use the postal service's flat rate box which will arrive to you in 3 to 5 days, I'll insulate the box really well and I'll include a supersized gel pack, made in the state of Hawaii, no less! And, instead of one box of chocolates, you'll find a 12 piece selection and an additional 6 piece sampler box. (these make great gifts!)And all of this for a total of $45.00 including shipping and materials. Here some of my stand by tried and true flavors:




Toasted coconut and Tahitian Vanilla surrounded by just enough European white chocolate to hold it all together
Hand made caramel (all organic sugar and no corn syrup) blended with very dark bitter chocolate and resting inside a vibrant blue butterfly
Creamy milk chocolate combined with macadamia nut butter for a peanut butter like taste and texture but oh so much better!
Lilikoi Creme hearts - need I say more? I make thousands upon thousands of these. The most requested flavor in Hawaii!
100 percent Kona coffee beans infused into fresh cream and blended with smooth chocolate. Your morning coffee in a bite sized little package.
Finely ground macadamia nuts married with the darkest chocolate I could find, sitting in a gold foil cup and capped with dark chocolate and gold leaf. For the dark chocolate purist!
